Ingredients

  • 4 cups of onions
  • 2 tbsp of minced garlic (6 cloves)
  • 1 cup of chopped red peppers
  • 1 cup of chopped yellow peppers
  • 1 cup of chopped orange peppers
  • 1 cup of chopped tomatoes
  • 3 tbsp of minced jalapenos (2 jalapenos)
  • 2 chinese whole dried chili peppers
  • 6 pounds of chopped meat
  • 1 pound of ground white turkey
  • 4 mild sausages
  • 1 big can (29 oz.) of crushed tomatoes and add half of another big can (29 oz.) of tomato sauce
  • 2 cans of kidney beans
  • 1 can of black beans
  • 1 tbls of of liquid smoke
  • 3 tsp of salt
  • 3 tsp of pepper
  • 1 tsp of crushed red pepper flakes
  • ½ tbsp of brown sugar

Step By Step Instructions

  1. Saute 4 cups of onions until golden brown
  2. When browned add 2 tbsp of minced garlic (6 cloves), 1 cup of chopped red peppers, 1 cup of chopped yellow peppers, and 1 cup of chopped orange peppers
  3. Saute. Add 1 cup of chopped tomatoes, 3 tbsp of minced jalapenos (2 jalapenos), 2 Chinese whole dried chili peppers(if you like it spicy), chopped very small
  4. While the veggies are sauteing, in a different pan saute . Brown until meat is cooked through(pour the meat in with all the juices(fat)
  5. Pour in with veggies
  6. In the same pan you browned the meat, brown 4 mild sausages cut into half moon shape
  7. After it is browned (cooked through), add it to the rest of the stuff
  8. Add 1 big can (29 oz.) of crushed tomatoes and add half of another big can (29 oz.) of tomato sauce
  9. Add 2 cans of kidney beans and 1 can of black beans
  10. Add 1 tbls of of liquid smoke
  11. Then add 3 tsp of salt, 3 tsp of pepper, 1 tsp of crushed red pepper flakes and 1/2 tbsp of brown sugar. Let cook for 2 hours on a low flame.
