Ingredients

Falafel

  • 2 cans of chickpeas
  • ½ onion
  • 4 garlic clove
  • 1 bunch of parsley
  • ½ tbsp salt
  • ½ tsp of pepper
  • ½ tsp of cumin (I crush fresh cumin seeds but regular ground cumin is fine)
  • ⅔ of cup of flour

Israeli salad

  • 1 large cucumber
  • 1 tomato
  • ½ juice of a lemon
  • 1 tsp of salt and pepper

Techina

  • ½ cup of tahini paste
  • 1 tbsp of lemon juice
  • 1 tsp of salt and pepper
  • 2 frozen garlic cubes or 1 fresh garlic cube
  • ½ cup of water

Step By Step Instructions

Falafel

  1. In a food processor combine the onion, garlic, parsley and all the spices
  2. Pulse, not into a paste
  3. When done, transfer into a bowl
  4. Rinse the chickpeas well, with cold water
  5. Drain the chickpeas
  6. Add to the empty food processor chickpeas and pulse well (but not into paste)
  7. When done add the chickpea mixture to the bowl with the onion-herb mix
  8. Add the flour and mix
  9. Chill for 15 minutes
  10. Pre-heat pot with oil
  11. From falafel mix into mall patties
  12. Fry until golden brown

Israeli salad

  1. Cut cucumber and tomato in small cubes
  2. Add lemon juice and spices

Techina

  1. In a food processor or blender, combine all ingredients
  2. Blend until smooth
  3. If too thick, add tbsp of water until needed
