Ingredients for the gnocchi

  • 1 bag of potatoes
  • 5 ½ cups of flour (plus more to shape the dough)
  • 2 eggs
  • 1 ½ tbsp salt (plus more for the water)

Ingredients for the sauce

  • ¼ cup of tomato sauce
  • I cup. Heavy cream
  • 1 ½ tsp. Salt
  • ½ cup. Parmesan cheese

Step By Step Instructions

  1. Peel and cut potatoes in big cubes
  2. Place in a big pot of boiling salt water
  3. Let cook until very soft
  4. Drain and mash very very fine ( i take a metal mesh strainer and push it through )
  5. Place on a flat surface and make a hole in the center
  6. Add the flour, eggs, salt
  7. Mix well until it forms dough (if needed add more flour)
  8. Pre heat a pot of boiling water with a pinch of salt
  9. Let rest for 10 minutes
  10. Roll into semi thin strings (about 1 inch thick)
  11. Cut with a bench scraper of knife to bite size pieces(try to keep each one the same size)
  12. Place in the pot of water and cook for about 4-6 min (or until it floats to the top) *do not cook all at once-cook in smaller batches
  13. In a small saucepan add heavy cream, tomato sauce and let get hot
  14. Add in the cheese
  15. Pour sauce over gnocchi and enjoy!
