Ingredients for the sauce

  • 2 tbls oil
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1-3 jalapenos (depending on how spicy you like it)
  • 5 chopped garlic cloves
  • 2 tsp salt
  • 1 tsp pepper
  • ⅓ cups of water
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp ground coriander
  • Parsley (can be dried) for garnish

Ingredients for the fish

  • 6 pieces of salmon fillets
  • Sprinkle of salt, pepper, chopped parsley (can be dried) and hot or smoked paprika

Step By Step Instructions

  1. Pre heat bid, deep pan (with a cover) with the oil
  2. Then add the onions, peppers, jalapenos, the salt and pepper (from the sauce)
  3. Saute for about 5 min. then add the garlic then keep sauteing for about another 7 min.
  4. Then add the water, oregano, basil, coriander and wait until the sauce simmers
  5. Carefully place the salmon on top of the sauce
  6. Sprinkle a pinch of the salt, pepper (from the fish), paprika and parsley
  7. (DO NOT MIX ANYTHING) cover and cook for about 15 min.
  8. Shut heat off and let rest (don’t uncover)
  9. Serve with chopped or dried parsley of top and enjoy!
