Ingredients for the chicken fingers

  • Family size bag Potato chips (salted)
  • 2 cups Almond flour
  • 1 tsp of Salt
  • 1 tsp of pepper
  • 2 tsp of garlic powder
  • 3 eggs
  • 4 big chicken cutlets cut into strips

Ingredients for the pesto mayo

  • 2 Cups of Basil
  • 1 Bunch of Parsley
  • 2 Cups of Mayonnaise
  • 3 Cloves of Garlic Juice from 1 Lemon
  • 2 Teaspoons Salt

Step By Step Instructions

  1. Crush the potato chips into pea sized pieces
  2. In a bowl or pan place the eggs, slat, pepper and garlic powder
  3. In another bowl or pan place the almond flour
  4. In another bowl or pan place the crushed potato chips
  5. Place a piece of chicken the egg mixture, flip so all sides have egg on it
  6. Then place in the flour and get a thin coat around the chicken
  7. Then place back into the egg and make sure t covers all sides of the chicken
  8. Place the chicken in the potato chips and all sides of the chicken should be breaded
  9. Repeat this process until all of the chicken has been breaded
  10. In a frying pan, fill the pan with enough oil that when the chicken goes in it will be surrounded by oil
  11. Fry the chicken, flip occasionally until golden brown
  12. Take chicken out of the pan
  13.  Place all pesto ingredients in a food processor and blend until smooth 
  14.  ENJOY!
